Lebanon Church Hosts Diabetes Seminar Focused on Lifestyle Change

The Lebanon, Tenn., Church hosted an eight-week health seminar, “Diabetes Undone,” which began February 1, 2026, and drew 16 participants from multiple churches and communities seeking to improve or reverse diabetes through lifestyle changes.

According to organizers, attendees represented nine cities, including members from four Kentucky-Tennessee Conference churches, one church outside the Conference, a community participant, and two individuals training to present the program in their own congregations. A total of 18 people registered for the seminar.

The program was organized after Dennis Stirewalt, pastor, encouraged church member Aimee Greene to develop a new health initiative. Greene consulted with Malinda Haley, Conference health ministries director, and selected the Diabetes Undone video-based seminar. The church board approved the program and scheduled the sessions.

Tom Day, a registered nurse specializing in critical care from the White House Church, served as facilitator. John Mathews managed audiovisual components, while Greene coordinated meal planning. Volunteers Sandy Mathews and Rashelle Stirewalt assisted in preparing and serving plant-based meals at each session.

Each class included a meal designed to demonstrate practical applications of a plant-based diet. Organizers said the meals aimed to show participants that healthy eating can be both appealing and sustainable.

The seminar featured weekly video presentations by Wes Youngberg, Dr.P.H., developer of Diabetes Undone, who emphasizes addressing root causes of chronic disease through nutrition, exercise, and other lifestyle interventions. Sessions included group discussions following each presentation. By the conclusion of the program, several participants expressed interest in continuing with follow-up meetings to support ongoing lifestyle changes, organizers said.
